Air Fryer Twice Baked Potato Recipe

Preparation time – 45 minutes
Cooking time – 20 minutes
Servings – 3
Ingredients
3 baked potatoes
1 cup grated cheddar
4 tbsp bacon crumbs
2 tbsp chopped green onions
3 tbsp curd cheese (with herbs)
2 tbsp sour cream
1/2 tsp salt
1/2 tsp pepper

Instructions
1. Wash the potatoes in advance and bake them in the oven or air fryer.
To bake, simply place the washed potatoes in their skins in the air fryer. Bake for 45 minutes at 360F, turning halfway through.

The potatoes should be easily pierced with a wooden skewer. Then carefully cut it into halves.
2. Using a spoon, carefully scoop out the pulp from each potato half.

3. Mix potatoes with sour cream, half the cheddar, cream cheese, salt and pepper.

4. Fill the potato halves with the filling and place in the air fryer basket. Bake for another 8 minutes.

5. Mix the remaining cheese with the bacon crumbles.

6. After 8 minutes, the potato filling will be slightly fried on top.

7. Place grated cheese and bacon on top of the filling.

8. Fry in air for another 2-3 minutes.

9. Serve the twice baked potatoes with green onions and extra sour cream and bacon.
